Jamaican Fine Dining at Home: Menu Ideas
By Chef Ricky · 2026-10-31
Where my cooking starts
My roots are in Jamaican food. Jerk spice, escovitch, curry, plantain and slow-cooked comfort dishes are the base, and I finish them with fine-dining technique.
Menu ideas
One past menu started with Jamaican chicken soup, moved through a burrata salad and coq au vin, then a steak course, and ended with chocolate mousse cake. Jamaican and French sit well together.
For a bigger party, a buffet with jerk BBQ steak, street corn and wings feeds a crowd and keeps things relaxed.
[Chef Ricky: add two or three of your signature Jamaican dishes.]
Pairing wine with Caribbean food
Spice and smoke need the right glass. I can recommend a wine for each course when you book.
